No bake raspberry cheesecake

Serves12:
Crust:
    150 g shortbread biscuits
  • 4 tbsp milk
  • 50 g skinless almonds
  • 80 g butter
  • oil and powder sugar for the tart pan

Filling:
    250 g fresh cheese
  • 250 g sour cream
  • 150 g powder sugar
  • 20 g powder gelatine
  • 200 g raspberries


Postup:
1. Crush the biscuits properly. In a large bowl combine them with the milk, finely grated almonds and melted butter. Press onto the bottom of a well greased and sugared tart pan with the removable bottom.
2. Soak the gelatine in 100 ml water. Warm up and let dissolve. Mix together the fresh cheese, sour cream, sugar and gelatine.
3. Spread the half of the cream over the crust in the pan. Add two thirds of the raspberries. Cover with the rest of the cream. Let firm in the fridge. Then garnish with the remaining raspberries and cut in wedges. Serve.
