Pansies

Recipe for 20 cakes:
  • 250 g butter
  • 250 g caster sugar
  • 6 eggs
  • 250 g medium ground flour
  • 1 tablespoon cocoa
  • 1 sachet of baking powder

Filling:
  • 250 g butter
  • 150 g icing sugar
  • 3 tablespoons rum
  • 2 tablespoons cocoa
  • 50 g grated coconut
  • 50 g chocolate icing
  • Marzipan flowers for decoration


Instructions:
1. Cream the softened butter and sugar together until fluffy. Add the sifted flour, cocoa and baking powder. Beat the egg whites until stiff and fold gently into the batter.
2. Line a higher-edged cake tin with baking paper and spread the batter across it. Place in a pre-heated oven and bake at 180 °C for about 20 minutes.
3. Turn out the baked cake body onto a teacloth and leave to cool. Then cut out rounds and cut them horizontally.
4. Beat the softened butter with sugar, rum and cocoa until fluffy. Crumble the rest of the cake body, add to the beaten butter and mix together.
5. Fill the cake rounds with half the cream. Spread the rest of the cream across the sides and cover with coconut. Pour the chocolate icing over the top of the cake rounds and decorate with a marzipan flower.

Preparation time is about 70 minutes. 1 cake contains about 1344 kJ/321 kcal.
